Spanish sherry vinegar
Spanish sherry vinegar is made from grapes from Andalusia in southern Spain.
Because of the famous Spanish sherry, the sherry vinegar was born here.
The brewing method of sherry vinegar is also to ferment the grapes and then transfer them to acetic acid fermentation.
However, unlike other vinegar fermentations,
the fermentation of sherry vinegar is to discharge the fermented barrels in different order according to the upper and lower levels.
The lower layer of the barrel fermentation broth is fully matured to produce vinegar,
and the upper layer of barrel will automatically use the drop to flow into the lower fermentation vat.
This is repeated.
The uppermost fermented wooden barrel is fermented for at least 5 years to ensure the pure flavor and stable quality of the sherry vinegar.
